Dee's Chocolate Zucchini Cake
- 1/2 cup shortening or butter
- 1/2 cup oil
- 1 1/3 cups sugar
- 3 eggs
- 1/2 cup sour cream or buttermilk
- 2 cups grated zucchini
- 2 1/2 cups flour
- 5 tablespoons cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons vanilla
Cream butter and oil together. Add sugar, then eggs. Add remaining ingredients. Pour into greased and floured oblong pan or bundt pan (or approximately 34 cupcake tins) Optional: Sprinkle chopped nuts and.or chocolate chips over batter.
Bake at 350 degrees for 35-40 minutes (or 20-30 minutes for cupcakes)
