Basil Pesto
1 c. packed fresh basil leaves
1 clove garlic
1/8 c. pine nuts
1/3 c. extra-virgin olive oil
Kosher salt and pepper, to taste
1/4 c. grated parmesan/romano cheese
Directions:
Combine basil, pine nuts, and garlic in a food processor and pulse until coarsely chopped.
Add oil and process until smooth. Season with salt and pepper. Transfer to bowl and mix in cheese.
